Exhibiting notes of sweet white peach, spring flowers, hazelnuts and pastry cream, Droin's 2023 Chablis Grand Cru Vaudésir is medium to full-bodied satiny and suave, with a quintessentially elegant, textural profile. It's even more expressive and aromatic than the 2022, despite its more recent bottling.

Description

Droin Chablis Grand Cru Vaudésir is a jewel of the Chablis region, located in one of the best parcels of the Grand Cru appellation . Stemming from vineyards located between 135 and 200 metres above sea level, this wine benefits from both northern and southern exposure, giving it an exceptional balance between ripeness and freshness. The soils in which the vines grow are made up of a mixture of clay and limestone from the Kimmeridgian, a distinctive geological component that contributes to the intense minerality characteristic of this wine.

Winemaking

The winemaking process begins with a manual harvest, followed by gentle pneumatic pressing to delicately extract the must. The must then undergoes cold sedimentation for 3 to 4 hours before fermentation with indigenous yeasts. Fermentation takes place in both stainless steel tanks and French oak barrels, allowing the wine to retain its fruity purity while gaining complexity through contact with the wood.
The ageing of the wine takes place over a period of 10 months, where 60% of the wine remains in stainless steel tanks to preserve its freshness and 40% in French oak barrels, 20% of which are new. This balance between steel and oak allows for a harmonious evolution, in which the wine develops additional nuances without losing its fruity and mineral character.

Taste

Droin Chablis Grand Cru Vaudésir is a wine that stands out for its balance between richness and freshness. On the nose, its aromas include notes of dried fruits such as hazelnuts and toasted almonds, as well as floral and white fruit nuances. On the palate, it is an enveloping wine, with a silky texture and a structure that combines opulence with vibrant acidity. As it ages, its mineral character is accentuated, revealing notes of flint and chalk, along with a saline finish reminiscent of the region's sea air.
This wine, of great elegance and depth, is ideal to accompany haute cuisine dishes such as fine seafood, especially scallops or noble fish such as monkfish or turbot. Its ageing capacity is remarkable, allowing its complexity to be enjoyed for several years.
