Description
High above the vineyards of Saint-Bris, where the clay and limestone hills of the Kimmeridgien dialogue with the fresh Burgundy breeze, Athénaïs de Béru continues a lineage of winegrowers dating back to the 17th century, but with a radically contemporary outlook. Their philosophy is clear: listen to the land, don't dominate it. With biodynamic practices and intervention-free winemaking, Château de Béru Athénaïs Macération seeks to capture the truest expression of the terroir, even if that means going against the region's most established conventions.
The idea for this wine came almost as an act of elegant rebellion. In contrast to the traditionalism that often surrounds Aligoté, this maceration cuvée was conceived as a free and deep exploration of the potential of this often underestimated grape. Planted between 210 and 250 metres above sea level, on slopes facing East, South and Southwest, this Aligoté plot breathes a mild, breezy climate, ideal for slow, balanced ripening. The Kimmeridgian soil, laden with marine fossils and limestone layers, provides a mineral tension that will be the common thread of the wine.
Winemaking
The winemaking process of Château de Béru Athénaïs Macération begins with a manual destemming, berry by berry, to maintain the integrity of the berries and to allow a delicate maceration, without excesses. The grapes ferment with their skins for 2 to 3 weeks in stainless steel tanks, in a slow dance where the must is imbued with texture, colour and phenolic complexity. After fermentation, the pomace is gently pressed vertically and the press wines are blended, respecting the identity of each fraction.
Château de Béru Athénaïs Macération is aged for 12 months in used Burgundian barrels, allowing the wine to develop without masking its varietal character or raw energy. It is not filtered, not clarified and no sulphur is added, preserving all the vitality and spontaneity of the wine.
Taste
In the glass, Château de Béru Athénaïs Macération is a subtle, slightly cloudy amber, as if it still carries with it a little storm from its origin. The nose is penetrating, with notes of candied orange peel, jasmine tea, dried hay and a background of wet limestone. Nothing here is complacent or fruity-obvious.
On the palate, it glides with an almost tactile texture, where light tannin and electric freshness coexist in controlled tension. The Aligoté reveals its wildest, most expressive face here, with flavours of dried citrus, bitter almond, a dry herbal trace and a lingering salinity reminiscent of its fossil soil. A lively, vibrant, deliberately untamed wine. An Aligoté for those who seek wine as an act of truth.
