Winemaking
Fermented with indigenous yeasts in stainless steel tanks. Malolactic fermentation in oak barrels. Aged for 30 months in French oak barrels and casks.
Description
The red wine Ceretto Barolo Bussia is produced in the Piedmont wine region, specifically in Monforte d'Alba, made exclusively from the local Nebbiolo variety.
Winemaking
After manual harvesting, the grapes are selected on a sorting table, discarding the berries of lesser quality. Fermentation is carried out at a controlled temperature in stainless steel tanks. Subsequently, the wine undergoes malolactic fermentation in oak barrels, and is then aged for around 30 months, divided between 300-litre barrels and large barrels of approximately 5,000 litres, with 10% new oak. Finally, the wine matures for a year in the bottle before being marketed.
Taste
Ceretto Barolo Bussia is a dry red wine, ideal for those who prefer absolutely dry flavours. It has a dense and fleshy texture. Its flavour reflects the typicality of the terroir: powerful and smooth, with a long finish and splendid acidity. There are earthy notes of damp forest soil, bitter orange and blue flowers. It is a noble wine, with body and depth. Despite its charm when young due to its aromas, it has a refined tannic profile that gives it great ageing potential.
