Fermented with indigenous yeasts and 20 days of maceration of skins in stainless steel vats. Aged for 11 months in 1,000 and 1,500 litre Slovenian oak foudres. Bottled unfiltered.

Description

Burja Noir is a red wine produced in the Vipava region from the Pinot Noir grape. Grown in a vineyard of 0.40 hectares, the soil in which these grapes grow is a combination of marl and sandstone. The vines have an average age of between 10 and 20 years, indicating a maturity that is reflected in the flavour of the wine. Following biodynamic farming practices, harvesting is done by hand, ensuring the selection of the best grapes.

Winemaking

Fermentation is carried out with indigenous yeasts, with a maceration of 20 days in steel tanks. The wine is aged for 12 months in Slovenian oak barrels, which gives it a unique structure and complexity. Furthermore, no fining or filtration is carried out, and a minimal amount of sulphur is added, making it a pure, unadulterated wine.

Taste

Burja Noir is a red wine with notes of raspberry, white pepper, earth and a hint of perfume. Unlike what one might expect from a Pinot Noir, the palate is not silky. Acidity and herbaceous character are prominent in this wine. Those with casual palates may not find this wine enjoyable, but for aficionados of this extreme style, it is highly appreciated. The finish is slightly herbaceous with chewy tannins.
