The Cazé-Thibaut winery is located in the charming Vallée de la Marne, specifically in Châtillon-sur-Marne, a place of rich history and winemaking tradition. This winery has been shaped and perfected over the centuries by ten generations of passionate and dedicated winemakers. Each generation has contributed its efforts and dedication to the land and craft, creating a legacy of commitment and excellence.
History
The history of Cazé-Thibaut began with Roger Cazé, who was the pioneer in marketing bottles of Champagne. He worked not only for the family winery but also for other winemakers in the surrounding villages, earning an enviable reputation for his skill and knowledge in the art of winemaking. In 1953, Roger created Champagne Cazé, a product that reflected his passion and mastery of the art of winemaking.
Today, Fabien Cazé continues this tradition of passion and precision in winemaking. Under his leadership, the winery produces elegant and precise wines, where the notion of terroir is fundamental. Fabien works tirelessly to create wines that reflect the unique and authentic character of the terroirs of the Vallée de la Marne.
Vineyards
The Cazé-Thibaut vineyards are located on the Rive Droite, in the heart of the Vallée de la Marne. This privileged location allows the winery to create cuvées with a strong and unique identity. The terroir of this region is unique and provides the ideal conditions for growing high quality grapes.
Work in the vineyards is carried out with a deep respect for the land and a commitment to sustainability. No herbicides or insecticides are used, and traditional practices such as griffage or binage are carried out to promote the healthy growth of the vines and optimise the ripening of the grapes. Manual labour is a constant in the vineyards, from pruning to harvesting, ensuring meticulous care and attention to every detail.
Philosophy
Cazé-Thibaut focuses on making authentic Champagnes that convey the truth and essence of their terroir. Each plot is seen as a unique land of expression, to be understood and cared for according to its specific needs. The aim is to convey an emotion of its own, reflecting the distinctive character of its terroirs.
The winemaking process is carried out with the utmost precision and attention to detail. A long period of ageing on fine lees in bottle, varying from 24 to 72 months, is carried out to develop and deepen the flavours and aromas of the wines. The dosage of the cuvées is decided by tasting, always seeking precision so as not to alter the nature of the wines.
Each wine is a reflection of the passion, respect for the land and commitment to excellence that characterises the Cazé-Thibaut winery. With a rich history and a clear philosophy, this winery continues to create wines that delight and surprise wine lovers around the world.
