Description
Respeto is an artisanal wine made by the López Díaz-Alejo family in the Mediterranean mountains of the province of Valencia. This wine is made entirely from the indigenous Bobal grape variety, grown in centenary vineyards that are more than 95 years old. These vines, cultivated without the use of chemical products both in the vineyard and in the winery, are the basis of a limited production wine, with only 600 bottles available. Respect for traditional techniques and the natural environment allows each bottle to capture the essence of the Mediterranean terroir.
Winemaking
The vineyards are located on soils with varied terroirs, which contribute to the complexity of the wine. The cultivation method is completely natural, with no chemical treatments or aggressive interventions, which guarantees the purity of the grapes and the resulting wine. As for the winemaking process, the grapes are harvested by hand and the maceration is very long, being carried out in small 1000 kg tanks to ensure rigorous control. Fermentation is carried out in French oak barrels at low temperatures, between 18ºC and 24ºC, allowing a controlled extraction of aromatic and polyphenolic compounds. Subsequently, the wine is aged for 24 months in barrels on fine lees, with periodic battonage to increase smoothness and complexity on the palate. No chemicals are added during the process, using only indigenous yeasts and the region's own bacterial flora.
Taste
The flavour of Respeto is characterised by its great fruit concentration, with intense aromas of ripe black fruit, such as blackberries and plums, perfectly balanced with spicy notes and a subtle hint of oak. On the nose, it is an expressive wine, with an explosion of fruit that captivates from the first moment. On the palate, it is pleasant and smooth, with well-integrated tannins and a balanced acidity that adds freshness and structure to the whole.
The texture is fleshy, almost chewy, and the finish is long, with a lingering mineral aftertaste that adds an extra layer of complexity. The wine's elegance is palpable in every sip, with a seductive combination of ripe fruit and spicy hints reflecting the influence of its long barrel ageing. The minerality and delicacy on the palate make Respeto a wine that is not only enjoyable, but also memorable for its unique character and faithful representation of Mediterranean terroir.
