Description
Quinta do Noval LBV Unfiltered is an outstanding example of the Noval style. It is treated with the same precision as a Vintage Porto, using only noble grape varieties from the Quinta.
Winemaking
The grape varieties used in this wine are Touriga Nacional, Touriga Francesa, Tinta Roriz, Tinto Cão and Sousón. These grapes are trodden by foot and the wine is not filtered. Vinification is carried out by treading the grapes by foot in the "lagares", the Quinta's traditional stone vats. Subsequently, they are macerated during fermentation to obtain the best possible extraction of polyphenolic compounds, a process that lasts 3 days. The main difference with other wines is its ageing: while typical Portos Vintage wines are aged for two years in barrels, this LBV(late bottled vintage) benefits from a five-year ageing. This long maturation gives it a fine tannic structure, great freshness and purity of fruit. It is a delicious wine to taste today, but will age beautifully in the bottle.
