Description
From her first steps in viticulture to the absolute quest for purity, Alice Bouvot conceived this L'Octavin Commendatore as a tribute to the wild softness of the Jura. In 2005, after training in Bordeaux and Burgundy, she returned to her homeland, Arbois, to embrace its Jurassic limestone and chalky soils. There, the Les Corvées plot, planted more than half a century ago, came to life in the oldest and most sacred vineyard in his cellar. It was an almost audacious decision: to renounce conventional methods, to introduce biodynamic practices, to dispense with additives and to rely exclusively on the character of the terroir. Once, a severe frost dramatically reduced Trousseau's production; however, Alice decided to wait, skimp on harvests and transform that loss into a wine even more true to her philosophy: minimal interventionism, maximum expression of place.
Winemaking
The grapes, 100% Trousseau, used to make L'Octavin Commendatore, are harvested by hand, carefully destemmed and placed in vats where they are macerated for eight months without any punching down or pumping over. This prolonged and silent treatment allows the wine to express an unusual finesse: mineral freshness, delicacy and depth. Nothing is forced: no pumping over, no sulphites, no filtration; everything flows with nature. After maceration, the wine is bottled without fining, preserving all its vital energy. The result is a red wine with a light weight but firm structure, which honours its origin and the rebellious character of its creator.
Taste
On opening, L'Octavin Commendatore can show a slight reduction: an earthy, closed veil that soon dissipates with air. And then... it bursts. Wild red fruits-blackberries, blueberries, cranberries, wild raspberries-emerge with vibrant aromatic sharpness. A straight, saline minerality appears right away, accompanied by dried spices, white pepper, subtle clove, and a whisper of cinnamon. The palate is smooth, fluid, with almost invisible but present tannins that bring tension without harshness. There is a bright, juicy acidity that gives the drink pace and propels it towards a long, slightly herbal finish, with hints of sage, undergrowth and wet stone.
The drink does not shout, but it speaks clearly. L'Octavin Commendatore is a wine for attentive ears, slow-paced, subtle intensity. It goes effortlessly with delicate dishes: sautéed mushrooms, poultry, washed rind cheeses or simply nothing. Letting it speak for itself is part of the pleasure. This is Trousseau at its purest: light, mineral, nervous and deeply Jura.
