Skin soaking for 50 hours and direct racking. Fermented with indigenous yeasts in enamelled fibre tanks. Aged on lees for 6 months. Second fermentation in bottle with a minimum ageing in lees for 36 months and a dosage of 3 g/l (Brut).

Winemaking
This wine is made from Pinot Meunier grapes. Its colour and flavour are due to the technique used for the maceration of the grapes, called Saignée. This technique is based on extracting the juice from the grapes and leaving the solids to macerate in the must, which gives it the characteristic colour and flavour of Champagne Rosé de Saignée.
Then, for its vinification, indigenous yeasts are used, followed by ageing on fine lees for approximately 2 years.
