Description
In the heart of the Jura, Alice Bouvot founded Domaine de l'Octavin with a radical idea: to put the grape back in the spotlight. After training in Bordeaux and Burgundy, her return to Arbois was not just a geographical return, but a philosophical one. In 2004 he acquired a small vineyard and an old winery, and since then his commitment has been unwavering: certified organic agriculture (ECOCERT), biodynamic practices (DEMETER) and natural, uncompromising winemaking. It is in this context that L'Octavin Dorabella was born, made from 100% Poulsard from vines over 50 years old on the La Mailloche and En Curon plots, on clay-limestone soils rich in history. Alice's decision not to add or filter anything - no sulphites, no sugar, no intervention - was, at the time, seen as daring. Today, this courage makes it a benchmark of purity and natural expression.
Winemaking
The grapes are harvested by hand, with an almost ceremonial care. The bunches destined for L'Octavin Dorabella are destemmed by hand, and maceration lasts nine weeks without punching down or forced extraction. Fermentation, always spontaneous, takes place with indigenous yeasts, and the wine rests in neutral containers, without intervention, clarification or filtering. Neither is sulphur dioxide (SO₂) added at any stage of the process. What emerges from this ritual is L'Octavin Dorabella, an ethereal, vibrant, luminous wine: a liquid translation of landscape and time, without make-up or artifice.
Taste
L'Octavin Dorabella has a translucent, almost ethereal ruby colour. Its aromatic expression is delicate and wild: fresh strawberry, sour cherry, pomegranate skin, with subtle hints of dried herbs, oregano and an earthy touch that evokes damp forest. On the palate, the wine is light but taut, with a lively acidity that stretches the profile from start to finish. There is a slight natural effervescence that adds freshness, almost as if the wine is breathing. There is no excessive weight, but a vibrant structure that envelops the palate with precision. At its core, the red fruit becomes juicy and crisp, accompanied by mineral, wet stone and chalky notes. The finish is clean, dry, with a subtle salinity and an aftertaste of sour fruit and dried leaf. L'Octavin Dorabella does not seek to please with obviousness, but to seduce with transparency. It is a lively, sincere wine, with a purity that thrills. A dance between the vegetal, the fruity and the mineral that can only exist when the wine allows itself to be, as Alice Bouvot dreamed: free, light, essential.
