Direct pressing of the Macabeo and skin soaking for 10 days for the Xarel.lo. Fermented with indigenous yeasts in fiberglass tanks. Aged for 12 months in used oak barrels for the Xarel.lo and in fibre tanks for the Macabeo. Bottled unfined, unfiltered and without added sulphites.

There are wines that tell you a story from the first sip. Amós Bañeres Hey! is one of them. This natural white is the calling card of Amós Bañeres, a winegrower who swapped his pharmacist's coat for his vineyard boots and never looked back. From his little corner in Alt Penedès, he makes wines without make-up, without artifice. Just vineyard, time and soul.
Winemaking
Amós Bañeres Hey! is a blend of Macabeo (60%) and Xarel-lo (40%), grown in clay-limestone soils, those that give the wine that touch of depth and freshness. The Macabeo, from slightly younger vines (planted in 1990), is pressed directly and fermented with indigenous yeasts, while the Xarel-lo, which comes from old vines from the 1960s, has a special step: a maceration with skins in amphorae for 10 days before ageing in used barrels. The result? A white with character, history and that rebellious spark that makes you want another sip.
Taste
If we had to describe it in one word, we'd say vibrant. But that's not enough. On the nose, Amós Bañeres Hey! is a festival: ripe peach, a hint of fresh citrus, a nod to the aniseed-like depth of Xarel-lo. On the palate, things get even more interesting: a sharp but well-integrated acidity and a texture that makes you think of those wines you drink almost without wanting to. It's juicy, refreshing and has that subtly saline finish that makes you salivate.
Amós Bañeres Hey! is a perfect wine to improvise a summer dinner with friends, to accompany a good fish stew or, if you want to get more sybaritic, with a well-done cuttlefish and peas. In any case, this is one of those wines that you should uncork without fear and enjoy without rules.
