Free-run alcoholic fermentation with indigenous yeasts in open oak vats. Aged for 24 months in 3,000-litre vats. Subsequently, it remains in the bottle for 12 months before being released onto the market. Bottled unfined, unfiltered and without added sulphites.

Description

Werlitsch Morillon Vom Opok is a wine that stands out for its authenticity and character. Produced in the Südsteiermark region of Austria, this wine is made from the Chardonnay variety, known locally as Morillon.
The Opok soil, rich in limestone and clay, is characteristic of the Southern Styria region and is where Ewald Tscheppe, works his vineyards following biodynamic principles. This combination of soil and winemaking techniques results in a wine that is a unique expression of Chardonnay, offering an unparalleled experience for those seeking authentic, natural flavours in their wines.

Winemaking

The winemaking follows biodynamic principles, which means working in harmony with nature, respecting natural cycles and avoiding the use of chemicals. After spontaneous fermentation, the wine is aged in 3,000 litre neutral toasted oak vats for two winters before being bottled in the spring of the second year.

Taste

Werlitsch Morillon Vom Opok has a refreshing acidity, similar to a Chablis, but with the floral bouquet of a high-end Condrieu. On the palate, flavours of green apple, quince, honeysuckle and mint can be identified. In addition, there are notes of bourbon vanilla, pastry cream, orange, almond, floral hints, hydromel, mountain honey and a mineral character.
Despite the richness of its aromas, the wine is surprisingly light and fine on the palate, with an enveloping and energetic texture. The presence of salinity adds freshness and vivacity, resulting in a wine with great finesse and elegance.
