Fermented with indigenous yeasts and aged in 400-litre French oak barrels. Second fermentation in bottle with a minimum ageing of 54 months. Disgorging by hand and bottled unclarified, unfiltered, with no added sulphites and no final dosage.
Description
Parmantier Les Oriseaux Brut Nature is a white wine made exclusively from Pinot Noirs by the Parmantier Frère & Soeur winery in France.
The vineyards from which the grapes from which this white wine is made were planted in 1966 in the Lieudit plot in Merfy, a village in the Montagne de Reims.
The vineyards were cultivated on soils with clay loam characteristics on the surface and transforming into clay loam in the depths with a favourable southern exposure.
Winemaking
The grapes are harvested by hand and selected according to the massal selection method, a vine ageing technique that aims to preserve its intra-varietal generic variability.
In addition, grapes of the highest quality are obtained that maintain the distinctive characteristics of the vineyard and its relationship with the terroir.
The wine has been vinified with a gentle maceration of the grapes for 3 weeks in 400-litre open barrels. The final dosage remains within the guidelines of a brut nature. Disgorgement is carried out by hand.
Afterwards, the wine is aged on fine lees for 12 months in the same closed barrels and bottled unfiltered, unclarified and with no added sulphur dioxide.
