Description
The Pàcina La Cerretina wine is an authentic expression of the Tuscan winemaking tradition. Produced at the Pacina winery, this Orange wine is composed of two emblematic varieties: Trebbiano Toscano and Malvasia del Chianti, both in proportions of 50%. These grapes are grown in a 0.5 hectare vineyard planted in 2008, with a characteristic soil of Tufo di Siena, a mixture of sand and clay. Production is 6,000 kg per hectare.
Winemaking
Spontaneous fermentation takes place in cement tanks, where contact with the skins lasts about 10 days. This maceration period allows the wine to absorb all the substances that characterise the grape varieties, as well as the elements that allow the wine to age without the need for external substances. After this process, the wine is aged in oak, acacia and cherry barrels for about a year. Importantly, the wine is not filtered and no sulphites are added, thus preserving its purest essence.
Taste
Pàcina La Cerretina is a wine that defies expectations. Its golden colour invites you to taste it. On the palate, it is crisp and slightly rough, evoking the flavour of the grape tannins. Despite its character, it has balanced acidity and tannins, which come through in a harmonious context. The aroma is intense and penetrating, with a distinctive character. Although it can be a challenge to find the perfect pairing, this wine pairs particularly well with foods rich in carbohydrates or starches, such as pasta, bread or rice, rather than fatty foods such as aged cheeses. It is a formative, educational and genuine wine, which may not be to everyone's taste, but it certainly offers a unique taste experience.
