Description
Ceretto Dolcetto d'Alba Rossana is a wine that comes from a splendid plot on the outskirts of Alba, historically recognised as one of the place names of excellence for the red grape variety Dolcetto. This variety gives rise to what can be considered the everyday wines par excellence, those that best match the dishes of Piedmont's rural cuisine.
Winemaking
The wine is made from 100% Dolcetto. In its production, a classical vinification has been chosen, able to enhance the primary characteristics of this splendid grape. Priority is given to the exclusive use of stainless steel in the production process so as not to contaminate the bouquet, which remains direct and pleasantly vinous. Particular attention is paid to deliberately short macerations, designed to contain the exuberance of the tannin, which is normally vigorous for Dolcetto.
Taste
This elegant Dolcetto is ruby red in colour with a garnet rim. It exudes aromas of red cherries that mingle with notes of lavender, violets and a hint of sweet almonds. On the palate, black cherries and sweet spices lead to a smooth, lingering finish. It is ideal with earthy dishes such as wild mushroom risotto, truffle ravioli and pizza.
